Salted Caramel Pretzel Hamantaschen Filling

Sweet. Salty. Slightly rebellious.

Salted caramel pretzel feels very 2026 to me. It’s nostalgic and modern at the same time — the comfort of caramel with the crunch of something unexpected. A little rebellious. A definite crowd-pleaser.

Everyone has their tried-and-true dough recipe. Choose that. This isn’t a revolution. 

Ingredients

  • ¾ cup thick caramel sauce (store-bought is perfectly fine — just choose one that’s thick, not runny)
  • ⅓ cup finely crushed salted pretzels
  • 1–2 tablespoons mini chocolate chips (optional, but encouraged)
  • Pinch of flaky sea salt

Instructions

  1. If your caramel is loose, chill it first. Cold caramel behaves better.
  2. Crush the pretzels finely — small pieces, not dust. You want texture without sharp shards that puncture the dough.
  3. Stir the crushed pretzels into the caramel. Add mini chocolate chips if using.
  4. Chill the mixture for 20–30 minutes. This step matters. A firmer filling means fewer leaks.
  5. Spoon about 1 teaspoon into each circle of dough. (Yes, it looks like too little. It isn’t.)
  6. Fold, pinch firmly, and slightly overlap the corners. If the caramel peeks out, it’s not a failure — it’s character.
  7. After baking, sprinkle lightly with flaky sea salt while still warm.

Notes From a Solid B-Level Hamantaschen Maker

  • Overfilling will feel right in the moment and wrong in the oven.
  • Pretzel pieces that are too large can cause splitting.
  • A little ooze is acceptable. Actually, it’s kind of the point.
