Before there was my great friend mahjong Abi, there was this really cool baker, Abi (spoiler: they’re the same person). I’m so lucky that she’s a part of my world — and even luckier that she’s shared this recipe from her former days as an amazing bakery owner.
This is the perfect Parshat Noah cookie — combining both the animals and the rainbow in one delicious dessert. Soft, buttery, and endlessly cheerful, these cookies are a guaranteed win. The classic “no-fail” sugar cookie dough is easy to work with and perfect for rolling out and cutting into fun shapes. Add a pop of color, and you’ve got cookies that look as good as they taste.
Ingredients:
- 6 cups flour
- 3 teaspoons baking powder
- 2 cups butter or margarine (460 g)
- 2 cups sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon salt
Directions:
- Cream the butter (or margarine) and sugar together until light and fluffy.
- Add eggs and vanilla extract. Mix well.
- Add the dry ingredients and mix until the dough is uniform in consistency.
- Divide the dough into six parts.
- Using gel food coloring, color each section of dough a different color of the rainbow. Knead each portion until the color is fully incorporated.
- Roll out a few strands of dough in each color and line them up next to each other in rainbow order — red, orange, yellow, green, blue, and purple.
- Lightly flour your surface and the top of the dough, then roll out the rainbow log into a flat sheet.
- Use your favorite animal cookie cutters (here are mine!) and position them so each cookie captures multiple colors.
- Bake at 180°C (350°F) for 8–10 minutes, until just set but not browned.
Let cool, admire your handiwork, and enjoy — these cookies are as joyful to look at as they are to eat!
