Cozy Cinnamon–Cardamom Hot Chocolate

It’s the first rain of the season, which always puts me in the best mood. Rain means cozy blankets, good books, and a warm house — and the fact that it’s weekend rain feels like such a gift. This hot chocolate just levels the game up a bit. A little cinnamon, a little cardamom… just enough to change the hot chocolate game and make an already cozy day feel even sweeter.

Makes 2 mugs

Ingredients

  • 2 cups whole milk (or 1 ¾ cups milk + ¼ cup cream for extra richness)
  • 2–3 Tbsp cocoa powder
  • 2 Tbsp sugar, or to taste
  • 2 oz chopped dark chocolate (optional but highly recommended)
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground cardamom
  • Pinch of salt
  • ½ tsp vanilla extract

Instructions

  1. Warm the milk in a small pot over medium heat until gently steaming.
  2. Whisk in the cocoa powder, sugar, cinnamon, cardamom, and salt until smooth.
  3. Add the chopped chocolate and continue whisking until melted and silky. Don’t let it boil.
  4. Remove from heat and stir in the vanilla.
  5. Pour into two mugs and top with whipped cream, marshmallows, or a sprinkle of cinnamon.
