It’s the first rain of the season, which always puts me in the best mood. Rain means cozy blankets, good books, and a warm house — and the fact that it’s weekend rain feels like such a gift. This hot chocolate just levels the game up a bit. A little cinnamon, a little cardamom… just enough to change the hot chocolate game and make an already cozy day feel even sweeter.
Makes 2 mugs
Ingredients
- 2 cups whole milk (or 1 ¾ cups milk + ¼ cup cream for extra richness)
- 2–3 Tbsp cocoa powder
- 2 Tbsp sugar, or to taste
- 2 oz chopped dark chocolate (optional but highly recommended)
- ¼ tsp ground cinnamon
- ⅛ tsp ground cardamom
- Pinch of salt
- ½ tsp vanilla extract
Instructions
- Warm the milk in a small pot over medium heat until gently steaming.
- Whisk in the cocoa powder, sugar, cinnamon, cardamom, and salt until smooth.
- Add the chopped chocolate and continue whisking until melted and silky. Don’t let it boil.
- Remove from heat and stir in the vanilla.
- Pour into two mugs and top with whipped cream, marshmallows, or a sprinkle of cinnamon.
